Sumac, Cheddar + Chive Scones

240g all-purpose flour
180g cheddar cheese, shredded
113g cold salted butter, cubed (I love Vital Farms for scones!)
113g cold buttermilk, can also use heavy cream or watered down sour cream
15g granulated sugar
15g baking powder
5g salt
5g freshly cracked black pepper
1 tbsp sumac
1 egg
3/4 cup finely chopped chives
Hot honey + butter, for serving
Instructions
Preheat oven to 400 F or 200 C. Line a baking sheet with parchment paper.
Whisk dry ingredients together in a large bowl. Add cubed cold butter and crumble into the dry ingredients until it resembles coarse sand. Chill in fridge for 5 mins if butter softens (want to keep cold before going into oven!).
Make a well in the center and add the buttermilk + egg. Whisk to combine until the dough just comes together. Add more flour or buttermilk as needed, dough should hold together but not be extremely moist.
Add cheese and chives and mix with a spatula until dough comes together (don’t overmix!).
Transfer to a lightly floured surface and pat into a 6x6” square and divide into 4-9 scones (depending on how big you want them).
Place scones on prepped baking sheet with about 2 inches in between each one.
Brush with buttermilk or cream and pop in the oven for about 25-30 minutes until golden brown.
Serve warm with butter and hot honey. Enjoy!
