Creamy Hummus w/ Fresh Veggies
Hummus is one of my all time favorite snacks / dips because it comes together in a blitz and you can customize it however you’d like. This is a classic recipe for the world renowned dip and I add a dollop of almond butter to mine to add a nutty twist! This is really a no recipe recipe but I have outlined what I usually add as a baseline for you to use in your own kitchen - feel free to jazz it up as much as you’d like and serve with fresh veggies, atop a Mediterranean bowl, or even on its own (it’s a dream!). Enjoy!
INGREDIENTS
HUMMUS
2 cans garbanzo beans, drained (but keep 1/4 cup of the liquid (AKA aquafaba) from 1 of the cans!)
1 medium garlic clove
1 large lemon (1/4 cup juice) + 1/2 lemon zest
2-3 tbsp good olive oil, plus more for drizzling on top of finished hummus if desired
1 tsp kosher salt
1/4 tsp cumin
1/4 tsp paprika
1 tbsp almond butter
Freshly chopped Italian parsley to garnish, if desired
ADDITIONS
Fresh veggies, washed & cut however you’d like!
More paprika for garnish, if desired
Chili-infused olive oil to top, if desired
Instructions
Place all ingredients for the hummus, with the exception of the chopped parsley, into a food processor and blend until smooth - about 2-3 minutes.
Arrange hummus on a serving platter or in a bowl and top with more olive oil, a sprinkling of more paprika, and the chopped parsley. Dip fresh veggies in it, serve atop your favorite proteins, or in a Mediterranean bowl for a lunch or dinner.
