Classic Small Batch Peanut Butter Blossoms

Fourth stop on the Lenten chocolate journey is right here in the United States for the easy and delicious peanut butter blossom cookie. My comfort cookie. This classic confection mixes peanut butter with chocolate in the best way. Homemade is always best, but you don’t have to make the peanut butter cookie from scratch. You most definitely can use a pre-made peanut butter cookie package if you really want these cookies pronto. My small batch peanut butter blossom cookie recipe is below if you’re feelin’ fancy and need a quick pick-me-up!

Ingredients

3 1/2 tbsp unsalted butter, melted

1/4 cup peanut butter, creamy

1/4 cup brown sugar

1 egg yolk

1/2 tbsp whole milk

2 tsp vanilla extract

3/4 cup all purpose flour

1/2 tsp baking soda

Pinch of salt

1/2 cup sugar, for coating

Instructions

  1. Preheat oven to 350°F (about 175°C). Line a baking sheet with parchment paper or silicone baking mat.

  2. Add melted butter and peanut butter to a small mixing bowl. Whisk until butter and peanut butter are well combined and mixture is smooth.

  3. Add in brown sugar, egg yolk, milk, and vanilla. Whisk again until well combined.

  4. Next, add in flour, baking soda, and salt. Fold mixture together just until you don’t see any more streaks of flour throughout the dough.

  5. Put about a 1/2 cup of granulated sugar in a small bowl. Use a 1.5 tbsp cookie scoop and form each cookie into a ball. Roll the dough ball in the white sugar until fully coated and place on the lined baking sheet.

  6. Space out the cookies a bit (an inch or two) on the baking sheet. Bake for 8 minutes. While the cookies are baking, unwrap as many Hershey kisses as you have cookies. This way, when the cookies come out of the oven, you will be ready to place the Hershey kisses in the centers of the cookie immediately to achieve that melty chocolate center.

    **Note: At the 8 minute mark, they may not look done, but trust me, they are done! If you cook over the 8 minute marker, they will become crunchy and crumbly, rather than soft and peanut buttery.

  7. Immediately when the cookies come out of the oven, press a kiss into the center of each cookie. Allow cookies to sit out until they are cooled. This will allow the kiss to become soft and melty perfection.
