Churros with Rich Chocolate Sauce
Final stop on the Lenten chocolate journey is Spain to indulge in churros with a rich, effortless chocolate sauce. Light, airy, crispy, crunchy—these churros have it all! And paired with a luscious chocolate sauce, c’mon!!! I promise you will want to eat them all the moment they’re dusted with cinnamon sugar. These were the best way to end our chocolate extravaganza.
Ingredients
CHURROS
1 cup water
2 tbsp unsalted butter
2 tbsp sugar
1/2 tsp salt
1 cup all purpose flour
2 eggs
Oil, for frying
Sugar and cinnamon for dusting/coating
CHOCOLATE SAUCE
4 oz semisweet chocolate, chopped
3/4 cups heavy whipping cream
Pinch of salt

Instructions
Combine water, sugar, and salt in a small saucepan over medium heat. Bring to a boil and remove from the heat. Wait 3-5 minutes until mixture is still cooled down, but still warm. Mix in flour, stirring until mixture forms a dough. Finally, mix in the eggs, one at a time, continuously mixing until everything is well combined.
Heat oil for frying in a deep fryer or deep pot to 375 °F (190°C). Line a baking sheet with parchment paper.
Combine sugar and cinnamon in a dish.
**Note: This will enable you to transfer churros in the cinnamon sugar mixture while they are still warm to allow the cinnamon sugar mixture to adhere to the churros.
Transfer the dough to a sturdy pastry bag fitted with a medium star tip. Carefully pipe a few 5- to 6-inch strips of dough onto the lined baking sheet. Cut squares in the parchment paper around each churro. Take each churro with parchment paper under it and submerge into the hot oil. Work in batches so you don't crowd the fryer. Cook until golden; use a spider or slotted spoon to flip the churros and also to transfer churros to paper towels to drain.
Allow churros to drain only for a minute or so and then roll drained churros in the cinnamon and sugar mixture.
CHOCOLATE SAUCE
Instructions
Put heavy cream in a small saucepan and bring to a simmer.
Take off the heat and add in chopped chocolate. Continue whisking until smooth and add pinch of salt.
Dunk warm churros in chocolate sauce and enjoy!
