Tomato Basil Bisque

Tomato basil bisque recipe is making her debut on the website. I know, overdue. However, just in time for soup season! This soup alongside a delicious sourdough (or croissant bread) grilled cheese is classic goodness that will warm you right up…. even in San Diego (wink wink). This recipe doesn’t need much of an introduction but my tomato basil bisque has no dairy involved - shoutout to my lactose intolerant gals and guys - and packs in quite a few veggies. However, I cannot stop you if you do choose to go the grilled cheese route to accompany this lovely bisque. Without further ado, let’s get cookin’!

INGREDIENTS

4 large Roma tomatoes, halved lengthwise

1 package cherry tomatoes

1 red onion, quartered into large pieces

1 medium sized yellow onion, chopped into large pieces

1 large red bell pepper, chopped into large pieces

1 medium sized yellow bell pepper (can replace with another red bell pepper), chopped into large pieces

3 garlic cloves, smashed to release oils and flavor

1 can coconut milk

12 oz cauliflower, chopped / broken apart into little florets

2-3 tbsp good extra virgin olive oil

Heaping handful (or 2!) of fresh basil

Salt and pepper to taste

Instructions

  1. Preheat oven to 350 F. Wash all produce well in sink and let dry on dish towels on the kitchen counter.

  2. Place Roma tomatoes, cherry tomatoes, red onion, yellow onion, garlic cloves, red bell pepper, yellow bell pepper, and baby cauliflower onto a large baking sheet. Toss with olive oil, salt, and freshly cracked black pepper.

  3. Bake in oven for 30 minutes at 350. Flip the baking sheet and increase heat up on oven to 375 F.

  4. Bake for another 35-40 minutes until vegetables are softened and cooked through.

  5. Once out of the oven, allow vegetables to cool for about 5-10 minutes before adding them to a blender. Add fresh basil and blend all together. Lower the speed of the blender and while blender is still is on, slowly pour in the coconut milk and cream from top of coconut milk can.

  6. Bring to a simmer on the stove and allow to heat through for about 15 minutes. Season to taste with salt and pepper. Serve alone with crackers and a dash of freshly chopped basil or alongside a fresh warm grilled cheese. Enjoy!
