INGREDIENTS

DOUGH

3 cups bread flour

3 cups all-purpose flour

1/2 cup unsalted butter

1/2 cup granulated sugar

2 cups whole milk

1 packet of active dry yeast, not instant yeast

2 tsp baking powder

1 tsp salt

CHAI MIXTURE

6 tsp cinnamon

4 tsp ginger

3 tsp cardamom

1 tsp nutmeg

1 tsp allspice

1 1/2 tsp cloves

1 tsp freshly cracked black pepper

FOR TOPPING THE DOUGH PRIOR TO CHAI MIXTURE

3/4 cup unsalted butter, softened

Brown sugar, as much or as little as your heart desires, I recommend a lot!

BROWN BUTTER CREAM CHEESE FROSTING

8 oz cream cheese, room temperature

1/2 cup unsalted butter, browned & solidified back to room temperature

2 tsp vanilla bean paste or vanilla extract

1/2-1 tsp kosher salt

3 1/2 cups confectioners sugar

Instructions

Dough Preparation

  1. Melt the butter in a small saucepan over low heat until just melted. Do not allow it to brown.

  2. Combine butter and sugar: In a large mixing bowl, add the granulated sugar. Pour in the melted butter and stir until fully combined.

  3. Warm the milk: In the same saucepan, heat the milk to 115°F (46°C). Use a candy thermometer to check the temperature.

  4. Add milk to mixture: Pour the warmed milk into the butter-sugar mixture. Whisk until smooth.

  5. Incorporate yeast: Sprinkle in the yeast and whisk until fully dissolved. Cover the bowl with a clean dish towel and let sit in a cool, dry place for 20 minutes, allowing the yeast to activate.

  6. Prepare dry ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

  7. Combine mixtures: Once the yeast mixture has rested and appears foamy, pour it into the flour mixture. Stir until a dough begins to form.

  8. Knead the dough: Transfer to a stand mixer fitted with a dough hook and knead for 8–10 minutes, or knead by hand until smooth and elastic.

  9. Let rise: Transfer the dough to a buttered glass bowl (preferred for optimal yeast activity). Cover tightly with plastic wrap and let rise in a warm place for 1½ to 2 hours, or until doubled in size.

Forming the Rolls

  1. Prepare the workspace: Once the dough has risen, lightly flour a clean, dry surface. Turn the dough out onto the surface and let it rest for 5–10 minutes.

  2. Prepare the chai filling: While the dough rests, mix together the chai spice blend in a small bowl.

  3. Roll out the dough: Using a rolling pin, roll the dough into a rectangle about ½ inch thick.

  4. Add the filling:

    • Spread a generous layer of softened butter evenly over the dough.

    • Sprinkle brown sugar evenly across the buttered surface.

    • Dust the chai spice mixture over the brown sugar. (You can sift the spices for an even layer if preferred.)

  5. Shape the rolls: Starting from the long edge, roll the dough tightly into a log. Using a sharp knife or dental floss, cut the log into 2–2½ inch slices.

  6. Arrange for baking: Place the rolls on a baking sheet lined with parchment paper or a silicone baking mat (such as a Silpat®). Silicone mats help caramelize the sugar for a crisp, sugary base and are easy to clean. Alternatively, buttered muffin pans work well.

  7. Proof the rolls: Cover the rolls loosely with plastic wrap and let them proof in a warm place for at least 30 minutes.
