Autumn Citrus & Fennel Chicken Bake

This Autumn Citrus & Fennel Chicken Bake brings that golden state glow right to your table. Juicy, herb-roasted chicken bakes with layers of California-grown Navel oranges, Meyer lemons, and blood oranges, mingling with sweet fennel and red onion for a fragrant, caramelized finish.
It’s the kind of simple, comforting meal that looks impressive but comes together with minimal effort — a true one-pan wonder. I love serving it with a side of crispy roasted potatoes to soak up the citrusy pan juices.

CHICKEN BAKE
4 bone-in, skin on chicken thighs (or breasts, if preferred)
1 fennel bulb, trimmed and thinly sliced (reserve fonds of garnish)
1 red onion, cut into wedges
1 large Navel orange, sliced into rounds
1-2 Meyer lemons, sliced into rounds
1 medium blood orange, sliced into rounds
3 garlic cloves, smashed
2 tbsp good extra-virgin olive oil
1-2 tbsp honey or maple syrup (optional, for caramelization)
1½ tsp Herbes de Provence
1 tsp smoked paprika
1 tsp fennel seeds
Salt and pepper, to taste
ROASTED POTATOES
2 cups baby or fingerling potatoes, halved
1-2 tbsp extra-virgin olive oil
1-2 tsp Herbes de Provence
Salt and pepper, to taste
Instructions
Preheat oven to 425°F (220°C).
Season the chicken: Pat chicken dry and rub with salt, pepper, smoked paprika, and Herbes de Provence.
Prepare the vegetables: In a large baking dish, combine fennel, red onion, and garlic with olive oil, fennel seeds, and a pinch of salt. Toss well, then nestle in the chicken pieces.
Add citrus: Layer slices of Navel orange, Meyer lemon(s), and blood orange around and slightly under the chicken. Drizzle with olive oil and honey (if using).
Bake uncovered for 40–45 minutes, until the chicken is golden and cooked through (165°F / 74°C internal temperature).
Roast potatoes separately: On a second baking sheet, toss the halved potatoes with olive oil, Herbes de Provence, salt, and pepper. Roast for 30–35 minutes, flipping halfway, until crisp and tender.
Finish and serve: Garnish the chicken with fresh fennel fronds and a squeeze of Meyer lemon juice. Serve with the roasted potatoes on the side. Enjoy!
