Essential Vinaigrette
A break from tomatoes to debut my elevated vinaigrette that comes together in a flash and can be adjusted for just about any salad. I make this on the weekends and store it in an airtight container to use on various salads throughout the week. This vinaigrette is a testament that yummy doesn’t have to be complicated!
INGREDIENTS
1 small shallot, minced
1/2 cup good olive oil
1 tsp honey
Juice of half a lemon, or whole lemon depending on how big the lemon is
1 tsp mustard, can be dijon or whole grain
Scrunch of freshly cracked black pepper
1-2 tsp sea salt
Grated parmesan, for topping salad
Instructions
Mix together minced shallot, olive oil, honey, lemon juice, mustard, sea salt, and pepper in a small bowl with a whisk or fork.
Pour over a bed of fresh lettuce and toss. Top with grated parmesan and some more freshly cracked black pepper. Enjoy!
*Notes: I love this vinaigrette recipe because you can adjust, add, or omit any of the ingredients to match whatever type of salad you are pairing it with.
For Asian salads, I omit the mustard and shallot and add in green onions, miso paste, and a dash of soy sauce.
For Italian-style salads, I omit the shallot and add in red wine vinegar, minced garlic, and oregano.
For a Caesar salad moment, I add in minced garlic, anchovy paste, Worcestershire sauce, and a dash of mayo or Greek yogurt.
The options are endless but this basic dressing is perfect on its own and remains my tried and true staple dressing.
