Cherry Tomato Chips

Tomatomania mini series with just 2 recipes included to usher out winter and begin our final descent into spring and summer. These delightful little flavor bombs only require 2 ingredients and of course, time. Once you make my cherry tomato chips, you’ll be making them all spring (& summer!) long! So go on now, you’ve got some cherry tomato chips to make!

Ingredients

20 oz (2 packages) Cherry tomatoes

1-2 tbsp Sea salt

Instructions

  1. Preheat the oven to 200 °F (93 °C). Line baking sheet with parchment paper.

  2. Cut cherry tomatoes in half lengthwise. Arrange them cut-side up on the baking sheet. (It is okay if they are touching.) Sprinkle well with sea salt.

  3. Bake for 2-3 hours until the tomatoes no longer have any juice in them and are completely dried out. The end result should be a soft yet almost leathery texture.

  4. Eat as a snack, top focaccia, soups, salads, or even pasta dishes and enjoy!
