Aunt Maris’s Maple Granola
My Aunt Maris makes this granola year round and it is the favorite part of our annual family reunions in the summertime. This is the basic recipe and she’s added dried fruit, various types of nuts, shredded coconut, and more. Take this recipe and please, oh please, make some granola and you might just find yourself making batches of this year round like Maris.
INGREDIENTS
4 cups oats
2 cups chopped almonds (lightly salted)
2 tsp cinnamon
2 tsp ground ginger
1/2 tsp nutmeg
Scant 1/4 cup good olive oil
1 cup maple syrup
Instructions
Preheat oven to 300 degrees Fahrenheit.
Mix oats, cinnamon, and almonds in a bowl.
Mix oil and maple syrup in a separate bowl bowl.
Pour the oil and maple syrup mixture over the oats/cinnamon/almonds mixture. Mix until well coated.
Spread evenly on parchment-lined baking sheet.
Bake in preheated oven for about 40-50 minutes until beginning to brown and become golden. Check halfway through baking and rotate the baking sheet to ensure even baking.
Pull out of the oven and allow to cool for about 15-20 minutes.
Combine in whatever additions you would like at this time (specifically for dried fruit). Store in airtight jars with lids for up to 2 weeks at room temperature. Enjoy!
