Pumpkin Chocolate Chip Loaf
Pumpkin, chocolate chips, and essential autumnal spices are wrapped into this one bowl wonder and devoured in minutes with a good slather of salted butter. What better way to bring autumn into your kitchen?! This one is a classic and will be one that everyone asks you to make consistently throughout the fall season (and you won’t be mad because it really is too easy!).
INGREDIENTS

3 1/2 cups all-purpose flour
2 cups granulated sugar
2 tbsp cinnamon
1 tsp nutmeg
1 tsp ginger
1/4 tsp cloves
1/4 tsp allspice
1 tsp cardamom
2 tsp baking soda
1 1/2 tsp kosher salt
1 cup vegetable oil
2 tsp unsulfured molasses
3/4 cup water
4 eggs, room temperature
1 cup semisweet chocolate chips or chunks, plus more for topping loaf
2 cups pumpkin purée
Baking/cooking spray for greasing loaf pan (can also use butter & flour - the “old school” way :))
Instructions
Preheat oven to 300 F.
Stir flour, sugar, spices, baking soda, and salt in a medium-sized bowl.
Whisk in the eggs, one at a time & mix until just combined before adding next egg. Add in oil, molasses, and water to the mixture until just combined.
Fold in the pumpkin purée and chocolate chips and/or chunks.
Pour mixture into 2 greased medium lid pans (4” x 8”). The pans should be almost full, with about a half of an inch left of space between mixture and top of the lid pan to allow for rising.
Sprinkle on chocolate chips and/or chunks on top of the loaf prior to baking.
Bake in oven for about an hour and 15 mins to an hour and 30 mins until a knife comes out (mostly) clean. (A little underdone is okay since you leave the loaf to finish cooling completely before slicing and the loaf will continue to cook slightly in the pan after coming out of the oven.)
Allow loaf to cool in pan before slicing and serving. This can be stored at room temperature for 3 days. Enjoy!
*A note from @kitchenbythesea - bake times vary by oven and pan size. “…For our 4x8 inch metal pan it takes 1 hour 25 minutes. We recommend using medium size loaf pan for the best result but if using a larger loaf pan the bake time will need to be increased or smaller decrease).”
