Roasted ARIA Tomato & Whipped Feta Flatbread

This easy flatbread is layered with roasted Windset Farms ARIA Premium Tomatoes, sweet peppers, creamy whipped feta, fresh basil, and a drizzle of honey with chili flakes for a sweet-spicy finish. The ARIA tomatoes are the real star of this dish—naturally sweet, juicy, and full of flavor, especially when roasted until blistered and caramelized.

INGREDIENTS

ROASTED TOMATOES & PEPPERS

1 container (1 lb) Windset Farms ARIA Premium Tomatoes
1½ cups Windset Farms sweet peppers, sliced lengthwise
3 tbsp extra-virgin olive oil
1 tbsp dried oregano
1 tsp red pepper flakes
Kosher salt and black pepper to taste
1 tsp red wine vinegar or lemon juice
Drizzle of honey or pinch of sugar
Optional pinch of smoked paprika

YOGURT FLATBREAD

1 cup Greek yogurt
2 cups all-purpose flour
¾ tsp kosher salt
1 tsp baking powder
1 tbsp extra-virgin olive oil

WHIPPED FETA

½ cup feta cheese
¼ cup Greek yogurt
1 tbsp extra-virgin olive oil
1 tsp honey
Lemon zest to taste

FOR SERVING

Fresh ARIA tomatoes, halved
Freshly torn basil leaves
Extra-virgin olive oil and red pepper chili flakes to taste

Instructions

  1. Prep the flatbread
    Mix flour, baking powder, and salt. Add yogurt + olive oil. Mix into dough; knead 2–3 minutes until smooth. Rest 10 minutes. Divide into 4–5 balls and roll thin. Cook in lightly oiled skillet over medium-high heat, ~2 minutes per side. Stack under a towel to stay soft.

  2. Roast the tomatoes and peppers
    Slice half the tomatoes fresh. Roast the other half at 400°F for 18–20 min with olive oil + salt. Combine roasted + fresh tomatoes in a bowl. Add vinegar, pepper, and tiny pinch sugar. Let sit 10 minutes (creates glossy tomato juices).

  3. Make the whipped feta
    In a food processor, blend together the whipped feta ingredients until creamy and smooth.

  4. Assemble
    Spread whipped feta over warm flatbread. Spoon tomatoes generously (include juices). Tear fresh basil leaves. Finish with flakey salt, cracked pepper, light honey drizzle (trust me), and more chili flakes.
