Hawaiian BBQ Salmon Tacos with Mango Salsa

Salmon marinated in ginger, garlic, and sweet barbecue sauce cooked in a cast iron skillet and paired with fresh mango salsa?! Get outta here! I love a good taco and these are by far some of my favorite to make. These tacos scream summer and will leave your taste buds needing more of the sweet, tangy, barbecue flavors dancing on your tongue. You can make the marinade and prep the salmon ahead of time and cook when you’re ready later on, making these a superb make-ahead meal for a family cookout or even a weeknight meal. You’ve gotta try these!

INGREDIENTS

**This recipe makes enough for approximately 2 tacos for 4 people.

4 4 oz salmon steaks, skin removed and cut into 1 in pieces

MARINADE

1 1/2 cups (12 oz) unsweetened pineapple juice

2 tbsp mirin, could also use rice wine vinegar

5 tbsp soy sauce (I use less sodium soy sauce)

3 tbsp ginger paste (could also use fresh grated ginger)

2-3 tsp garlic, minced

2 tbsp sesame oil

3 tbsp light brown sugar

3/4 tsp freshly cracked black pepper

Good pinch of sea salt

MANGO SALSA

3 ripe mangos, diced

1/2 cup red onion, chopped

1/4 cup fresh cilantro leaves, chopped

1-2 jalapeños, minced with seeds removed

1-2 limes, juiced (roughly 1/4 cup of lime juice)

Sea salt, to taste

TOPPINGS/ASSEMBLY

Avocado, sliced or mashed

Cilantro leaves, chopped

Cotija cheese, crumbled

Flour or corn tortillas, warmed

Instructions:

  1. Put all the marinade ingredients in a plastic resealable bag and mix around. Add salmon and allow to marinate for 1-4 hours.

  2. In a small bowl, combine the prepared mango, red onion, cilantro, and jalapeño. Drizzle with lime juice and allow to sit for at least 10 minutes while you cook the salmon.

  3. Once ready to cook, heat a large seasoned cast iron skillet on medium high heat. Add in salmon and cook for about 8-10 minutes, flipping every so often to ensure a nice sear and that the salmon is cooked through without becoming tough. Transfer to a warm plate and allow to rest while you prep the toppings and tortillas.

  4. Turn the heat on the cast iron skillet down to a low flame. Warm your tortillas in the cast iron skillet using the remaining liquid from the salmon in the pan to warm and flavor the tortillas through prior to serving. Once warmed through, continue with the next batch of tortillas. Continue this until you have the desired amount of tortillas. Turn off heat once complete.

  5. Stir the mango salsa and season to taste with sea salt. Serve tacos with warmed tortillas, salmon, mango salsa, and any other toppings you prefer. Enjoy!
