Zucca Chips

Zucca chips. These will change your entertaining game. Thinly sliced zucchini, lightly breaded with Italian breadcrumbs, freshly grated parmesan, salt, and freshly cracked black pepper. They will have you coming back for handful after handful - without feeling the guilt of traditional fried zucchini. My mom made these for my family and I throughout my childhood and they are just too easy and delicious not to share!

Ingredients

2 zucchinis, small to medium-sized (or 1 large zucchini)

1/2 cup Italian breadcrumbs

1/2 cup Parmesan cheese, freshly grated

1/2 tsp salt

1/2 tsp black pepper, freshly cracked

3-4 tbsp fat free milk, can also used plant-based milk

Cooking spray

Instructions

  1. Preheat oven to 425°F (218°C). Place ovenproof baking rack on a baking sheet and spray with cooking spray.

  2. Place milk in a shallow bowl.

  3. Combine breadcrumbs, Parmesan, salt and pepper in a separate shallow bowl. Whisk briefly.

  4. Slice zucchini into 1/4 inch thick slices. I used a mandolin to quicken this process, but you most definitely could cut the zucchini by hand with a knife.

  5. Dunk zucchini slices in batches in the milk and then the breadcrumb mixture, ensuring an even coating on each slice.

  6. Place on a prepared baking rack as you go. Once rack is filled, put first batch of zucchini in the oven until golden brown and crispy, about 25 minutes. Continue this process in batches, or if you have multiple ovenproof baking racks, complete in one fell-swoop! Serve immediately.

    *Note: You can also air fry these if you wish!
