Brown Butter Mashed Potatoes
These Brown Butter Mashed Potatoes are my upgraded take on the classic holiday side—rich, cozy, and full of flavor from an infused cream simmered with bay leaves, sage, nutmeg, garlic, and fresh thyme. A splash of buttermilk at the end adds light tanginess and an ultra-fluffy texture, while an optional baked-potato method delivers even deeper potato flavor without any water dilution. Finished with nutty brown butter and fresh herbs, this dish is simple, elevated, and guaranteed to steal the spotlight on your Thanksgiving table.

Pesto Lasagna
Two ingredients that make this recipe shine are homemade pesto sauce and cottage cheese. Substituting cottage cheese for ricotta adds protein and enhances the overall texture of the lasagna. This lasagna is perfect to make ahead for hosting and holidays because you can make ahead and then pop it in the oven in advance while you drink and eat and be merry :)
Cornbread Stuffing with Apples and Fennel
Upgraded stuffing recipe for your holiday table (or a hearty side dish for the colder months)! This elevated “dressing” recipe is all things autumn complete with sage, cornbread, apples, and fennel. You could easily add sausage or bacon and make this a more complete meal-casserole-situation a lazy lunch or dinner.
Acorn Squash Soup
Sweet, nutty acorn squash gets combined with umami shiitake mushroom soy glaze and the result is a silky, thick and comforting soup for the cold months ahead. I topped with crispy fennel bits, freshly chopped parsley, and dunked with fresh grilled baguette. This soup is too good not to love.
Grilled Plum Autumn Salad
Plums are underrated and need to become the star of the show! This autumnal salad is my beginning effort in that endeavor. Simply grilled with coconut oil spray and a pinch of salt, plums become slightly charred and ever so slightly sweeter. Add in candied (or smoked!) nut of your choice, pomegranate seeds, and cilantro atop a mix of spinach and arugula and you have yourself a great salad with a variety of different textural notes that celebrate autumn.

Lasagna Rollups
Lasagna, vertically. This dish was inspired by Massimo Bottura’s “The Crispy Part of the Lasagna” dish. Classic lasagna components such as a delicious bolognese-style sauce, various types of shredded cheese, and hearty lasagne noodles come together and are baked and broiled in the oven until you get that “crispy part of the lasagna” on the top of every rollup. How incredible is that?!
Pumpkin Miso Risotto
Autumnal pumpkin risotto with a little nudge of miso for extra umami. Yes, it is heavenly, and yes, you will want to eat the entire pot.
